Macallan 30 Year Old was matured in Spanish oak casks which were handmade and seasoned with sherry in Jerez, Spain.
Distilled in 1962, it was matured in Sherry wood and bottled at 80° proof in Scotland by Campbell, Hope & King for export to Italy. Highly sought after bottling.
A special release of 18 year old single malt from The Macallan, distilled in 1979 and bottled in 1997. While Macallan is well known for their Sherry cask-matured whiskies, “Sherried” does not even do this one justice. The Gran Reserva releases are seriously super Sherried and highly sought after – the 1979 vintage is particular popular within the series.
An unchillfiltered small batch Macallan 1997 from Murray McDavid. This was initally matured in normal ex-bourbon casks, before a finishing period spent in Bordeaux casks from the exalted Chateau Latour, which have imparted a rosy hue to the final product.
This superb Macallan bottling was released in 1981 to commemorate the marriage of Prince Charles and Lady Diane Spencer. A unique vatting of Macallan single malts distilled in 1948 and 1961, which represent the Royals, birth years.

The Macallan used Speyside peat in the malting process from inception in 1824 through the late nineteenth century when railways brought more heat efficient fuels like coal. By the 1930’s, peat was still there, although it is only lightly discernible. But the World War years limited the supply of fossil fuels, so the peat was used again for a while; effectively disappearing in the post-war years.
