All vines are harvested by hand and sorting is done in the vineyard. The grapes are de-stemmed and sent to the press by conveyor. Pressing happens slow and with a very low pressure. Spontaneous fermentation if it is justified, otherwise with a pied de cuve. Fermentation takes place in Burgundy barrels of two or three wines
