This añejo tequila is made from 100% mature blue Weber agave grown in the highlands of Jalisco, Mexico. The agave plants are carefully selected and harvested by hand. The hearts of the agave, known as piñas, are cooked in traditional brick ovens to convert the starches into fermentable sugars. After the cooking process, the agave is crushed to extract the juice, which is then fermented using natural yeast. This fermentation process allows for the development of unique flavors. The fermented juice is then double distilled to create a smooth and refined tequila. Following distillation, Clase Azul Añejo is aged in oak barrels for a minimum of 25 months. This extensive aging period imparts rich flavors and complexity to the tequila. The oak barrels contribute notes of vanilla, caramel, and spice, while allowing the agave’s natural character to shine through. The result is a full-bodied and velvety tequila with a deep amber color. Clase Azul Añejo showcases flavors of cooked agave, caramel, chocolate, dried fruits, and oak.
